Recently I’ve been craving foods that I (mostly) gave up over a year ago: meat, eggs, cheese. I love all three, but I can’t regularly eat those things without negative health consequences. So, it’s time to introduce some new foods, diversify the plate a bit and see what’s out there that I might incorporate moving forward.

I’m not big on egg substitutes – but I tried one tonight that deserves praise and you might want to give it a try: Just Egg. I don’t overuse this word, but it really was AMAZING. I scrambled some and it tasted EXACTLY like scrambled eggs. Exactly. They nailed the texture. Color. Taste. The $ 5.99 price tag will probably get 3 uses (I used 1/3 of the bottle and it made the same quantity as 2-3 scambled eggs). I just added some cracked black pepper and no butter (or butter substitute) and it was yummy.

I still won’t use this to cook/bake with – I’m totally happy with this applesauce substitution for muffins and pancakes – but when I need a future egg fix . . . this is IT!
